How Long Does Beef Last in the Freezer? (A Farmer's Honest Answer)

Last night a customer-to-be reached out with a question we get all the time:

"How long does beef last in the freezer?"

I assume this is such a common concern because most folks aren't 100% sure they can throw back half a cow in a timely manner.

Which is fair. A Half Beef Share is a serious pile of meat. Especially if you're coming from the grocery store lifestyle.

So I figured I'd break it down for everyone.

The short answer: with proper packaging and a chest freezer, you can comfortably plan on 18+ months of high-quality shelf life. Technically, as long as it stays frozen, the safe shelf life is indefinite. But you're going to run out before you ever have to think about it.

The longer answer involves three things: math, packaging, and the freezer itself.

1. The math: will you actually eat it all in time?

The average American family of 4 eats around 220 pounds of beef a year. Averages are a fickle thing (your family might eat a quarter of that or twice that), but a 200lb Half Beef Share is going to be well within reason for most families.

2. The packaging: why our beef holds up so much longer than grocery beef

• Dry aging. All of our beef is dry aged, which pulls a bunch of the water out of the meat. This is mostly about flavor and texture (it's a big part of why DDF beef tastes the way it does), but a happy side effect is fewer ice crystals in the meat, which means better texture and flavor long term. • Hand packing. Every box gets packed by a human (Jackson, mostly) and we pride ourselves on tetris-like packing skills that get your beef safely to your doorstep.

3. The freezer itself: chest beats upright, and it's not close

Chest freezers beat standing freezers for long-term storage. And it's not a close fight.

Temperature swings are the enemy of frozen beef, and every time you open a standing freezer door a wall of cold air falls out onto your feet. Chest freezers hold their cold. Open the lid, cold stays put.
