What Is Hanging Weight — and Why DDF Doesn't Use It
Most farms that sell beef shares price by hanging weight. This is where it gets annoying.
Hanging weight is the weight of the carcass after slaughter but before it's been trimmed, deboned, and cut into the actual beef you eat. It's heavier than take-home weight — by a lot. Typically 40ish% heavier.
So when a farm says "$6–10 per pound hanging weight," you're paying for bone, trim, and water weight that you'll never see. Then you pay butcher fees on top of that — typically $400–600 in cut-and-wrap charges — billed separately, due at pickup.
Do the math and most farms charging $8/lb hanging weight end up costing $12–16/lb of actual take-home beef, before you add the butcher fees.

How Long Does a Half Cow Last?
For a family of four eating beef a few times a week: 6–12 months.

How the Reservation Process Works
Simple on purpose.
- Reserve with a deposit. You put down a deposit to get on the schedule. This locks in your spot.
- We reach out to confirm your preferences and answer questions. You tell us if you want bones/organs/fat or extra ground beef.
- Balance due at fulfillment. The remainder of your total is collected when your beef is at the butcher (just prior to shipping).
- Your order ships to your door. Your freezer comes first. Once it is set up and you confirm it's working we ship your beef. Packed and frozen. Arrives in 1–2 days via UPS ground across the Northeast.
