Whenever I engage in some light, recreational beef braggery like I did yesterday, I get a lot of replies along the lines of….

"Seriously, how can your beef be THAT much better?"

People always want to know about the grasses, the breeds of cattle, or maybe just get me to admit that I'm full of it. They want a hack. A trick. A proprietary secret. Some unique angle that explains what makes great beef so they can buy a version of it on Amazon by tomorrow. But the real truth, and I cannot overstate this enough, is simple…..

The secret is time

I've talked about this many times, and will talk about it many more.

Because no other factor comes anywhere close to just taking your time and being sure the animal is well finished right.

Now obviously you have to be doing the right stuff during that time. You can't leave a cow in a closet and have it come out prime.

But among many factors, time sticks out as particularly indispensable.

Why "optimizing" everything ruins the thing

We live in a society where everything needs to happen RIGHT NOW on an industrial timeline.

No one wants to do the hard work of just waiting.

Everyone is obsessed with optimizing every possible other factor. Everyone wants to "scale" and fantasize about efficiency and AI or whatever.

Wanting to get bigger than you can handle is the "living above your means" of farming.

When you chase growth (beyond a reasonable point) you start making shortsighted choices.

You cut corners to speed things up. You've got orders to fill and a timeline to keep. You compromise bit by bit. And after a while it gets too big, and you ruin something that started out great.

Why we reject the speed-up philosophy entirely

We reject this entire philosophy as a business principle.

Which is why our beef is amazing, and commodity beef gets worse every single year while the industry celebrates "finishing" cattle faster and faster.
