The Nose-to-Tail Box is the most nutrient-dense way to eat beef, and the way our great-grandparents did it. It is a hand-built collection of the bones, organs, and fat from the same 100% grass-fed, grass-finished cattle we raise on regenerative pasture in the Hudson Valley. Nothing here is an afterthought. These are the cuts that built strong families for generations, before the grocery store taught us to throw them away.

If you have wanted to add organ meats to your family's plate, brew real bone broth that gels on the counter, or render your own clean cooking tallow, this box is the easiest place to start. One order, the whole animal, delivered frozen to your door.

What's in the box (about 23 to 24 lbs total):

  • Oxtail (2 to 3 lbs) – rich, gelatin-heavy, the secret to a deep braise or stew
  • Marrow Bones (about 2 lbs) – roast them and spread the marrow, or add them to your broth pot
  • Knuckle Bones (about 6 lbs) – the workhorse of a gelatin-rich bone broth
  • Beef Tongue (about 2 lbs) – tender and beefy when slow-cooked, a true ancestral delicacy
  • Beef Heart (2 to 3 lbs) – lean, mild, and loaded with CoQ10; grills and sears like a steak
  • Beef Liver (3 lbs, in 1-lb packs) – nature's multivitamin, portioned so you use what you need
  • Beef Kidney (about 1.5 lbs) – classic in steak-and-kidney pie and old-world braises
  • Beef Suet, Pre-Ground (about 4 lbs) – already ground, so you can render clean, pure tallow at home with almost no prep

Why it matters: organ meats are some of the most vitamin-rich food on earth, and grass-finished bones and fat are how you get the real thing. Buying these cuts piece by piece would run close to $300. The box brings it all together for $249, frozen and shipped 1 to 2 day ground across the Northeast.

Raised on grass, finished on grass. No grain, no hormones, no antibiotics, ever. Honor the whole animal, nose to tail.
