Before anything else, know that you're not the only one who clicked wanting the actual list. The most common question our farm gets, day after day, is some version of "what exactly comes in it?"

So here is exactly what comes in a whole cow from our farm: 400 pounds of 100% grass-fed, grass-finished, dry-aged beef (plus that freezer)

140 to 160 lbs of ground beef

An 85/15 blend, about three pounds a week for a year. Tacos, pasta sauce, meatballs, burgers, the double batch of chili. The pile your family eats through without thinking about it.

Don't want the bones and organs that come with a whole animal? Swap them for extra ground beef or our Primal Blend. That's the only swap we do, and plenty of families take it.

100 to 120 lbs of dry-aged steaks

More than seventy individual steaks:

  • 16 ribeyes
  • 12 to 16 T-bones and porterhouses (this is where the filet/tenderloin winds up)
  • 8 to 10 top sirloins
  • 8 to 12 each of chuck steak, Denver steak, top round/London broil, and sirloin tip
  • 2 each of skirt, flank, picanha, flat iron, and tri-tip

Every steak is dry-aged: the meat hangs in a humidity-controlled cooler for weeks, moisture leaves, flavor concentrates. It sears instead of steaming.

100 to 120 lbs of savory cuts

The slow-cooker, Dutch-oven, Sunday-morning pile:

  • 2 briskets (each cut in half, for 4 total pieces)
  • 6 to 10 roasts (chuck, shoulder, eye round)
  • 16 to 20 packs of stew meat
  • 12 to 16 short ribs and 12 to 16 shanks

The math

$6,940 for about 400 pounds is about $17.35 a pound, all in. Not $17.35 for the ground and $48 for the ribeyes: one price across the whole animal, all sixteen ribeyes included.

Pay in full and it's 5% less ($6,593), which brings it under $16.50 a pound.

We are not the cheap option next to commodity beef at a regular supermarket, and we won't pretend otherwise. But compared to the 100% grass-fed beef our customers were actually buying before (premium grocers at $12 to $35+ a pound, $40-plus ribeyes at a good butcher), the bulk pricing saves a surprising amount of money

How reserving works

We don't ship from a warehouse, because there isn't one. We harvest a few cattle each week, in the order they were reserved. Reserving puts your animal in that queue: raised to spec, dry-aged for weeks, butchered, then shipped. At any given time our waitlist is about 2 to 3 months (right now we're reserving for November 2026).
